Dishwasher Failed to Sanitize in Satellite Pantry

Summary

The facility failed to ensure a dishwasher in 1 of 3 satellite pantries was maintained in good working order to properly sanitize dishes, utensils, and other cooking equipment. During observation in the Reflections satellite pantry, the Culinary Director started a dishwasher cycle and a colorless transparent liquid seeped from underneath the machine into a puddle in front of it. After the cycle ended, a chlorine test strip wiped on the dishwasher door did not change color, and a second test strip on the door also did not change color. A second cycle was started, and at the end of that cycle three chlorine test strips were used on the dishwasher door, the dish rack, and the water pooling at the bottom of the dishwasher. None of the strips changed color. Water continued to seep from underneath the dishwasher to the front and right side of the machine. The Culinary Director stated the dishwasher was a low temperature machine with chemical sanitization using chlorine bleach, and that the test strip should turn purple to indicate the ideal chlorine sanitizer concentration of 100 ppm. The Culinary Director confirmed the test strips indicated 0 ppm and that no sanitizing agent was being delivered to the dishwasher. The facility policy stated that dish machines must automatically dispense detergents and sanitizers.
