Summary

Sanitary conditions were not maintained throughout the kitchen during surveyor observations. In the kitchen, a reach-in refrigerator near the deep fryer was observed at 50 degrees, and staff member J identified two plastic cups of drinks in the walk-in cooler as likely belonging to staff and said they should not have been there. A 5-gallon bucket of sauerkraut was uncovered, and bags of breadsticks and green beans in the freezer were not closed or dated when opened. The deep fryer oil had a film of brown residue floating on the surface while cooked chicken strips and French fries were being prepared, and the burners on the right-hand side of the stove were soiled with dried white batter. The temperature log for the reach-in cooler near the deep fryer showed temperatures of 42 degrees, 50 degrees, and 45 degrees on different shifts, and the form did not show what had been done to correct temperatures that exceeded accepted parameters. On the next day, staff member M said the cooler had been too warm and that the cord had been replaced, and staff were educated about notifying the manager if the cooler was out of range. Additional observations showed the floor under the cooler was soiled with debris, the fryer oil remained dark with brown floating debris, the stove grates and cooktop still had dried batter, the backsplash had dried red food splatters, the oven contained food debris and black particles, and the convection oven handle was sticky. In the cooler, opened milk and Silk milk were not dated, and numerous containers of juices were not labeled or dated. During dishwashing, staff member N was observed handling clean trays and dishes with soiled hands and using a cloth from the dirty dish area while loading and removing items from the dishwasher, without washing hands before touching the clean items.
