The facility failed to store food in accordance with professional standards when kitchen staff did not consistently label and discard perishable items as required. During a kitchen tour, the Kitchen Manager confirmed that three loaves of bread sitting on the counter lacked discard-by dates, despite the facility’s practice that all perishable foods removed from the freezer and stored in the refrigerator or on the countertop for imminent use must be labeled with a discard-by date. She also confirmed that all leftovers prepared in the kitchen are supposed to be labeled to indicate when they have been in the refrigerator for three days and must be discarded. Further observation revealed a large box of hard-boiled eggs in the refrigerator labeled with a discard-by date of 11/20/25 and a bag of pancakes in the refrigerator without any discard-by date. In addition, a cook confirmed that a bag of cheese he intended to use for lunch preparation had a discard-by date of 2/4/26, indicating it was past the labeled discard date at the time of use. There is a potential for all residents to be affected by these food storage and labeling practices, as the deficiencies involved general kitchen food items used in meal preparation rather than food designated for specific individuals.
