Review of the kitchen's refrigeration and freezer temperature logs revealed significant gaps in monitoring, with only 104 out of 216 required temperature recordings documented for the main kitchen's refrigerators and freezers over a specified period, leaving 112 instances unrecorded. Additionally, the basement refrigeration log showed no recorded temperatures for two freezers and one refrigerator over a nearly three-week period.
