Summary

During an initial tour of the facility's kitchen, surveyors observed multiple instances where food items in the walk-in coolers and freezer were not labeled in accordance with professional standards. Specifically, opened containers of buttermilk ranch dressing, Dusseldorf mustard, banana pudding mix, chocolate pudding mix, sour cream, and bagged provolone cheese were either missing open dates, use-by dates, or both. In the walk-in freezer, open bags of sausage links and chicken tenders also lacked use-by dates. Staff interviews revealed that the facility's food labeling system had run out of labels, and while improvised labels were used, staff were inconsistent in following the interim labeling process.
