Summary

Surveyors observed multiple instances of unsanitary conditions and improper food handling in the facility's kitchen. A black kitchen aid mixer was found on the counter with white encrustations, and the dietary manager (DM) confirmed it was not in sanitary condition. Additionally, a kitchen cabinet near the thawing station, used to store clean stainless-steel pans, was found to have dust-like particles and dry noodles on the surface, with one pan cover showing yellow dry encrustations. The DM acknowledged that the pans were not stored under sanitary conditions. Further observations during meal preparation revealed improper hand hygiene and glove use. The DM was seen touching her clothing and then serving ready-to-eat food onto a meal tray without performing hand hygiene. In another instance, the DM, while wearing gloves, cracked raw eggs on a griddle and then handled toast and plated it without changing gloves or performing hand hygiene between handling raw and ready-to-eat foods. The DM admitted to not following proper hand hygiene protocols in these situations. These actions were not in accordance with FDA Food Code requirements for kitchen sanitation and food handling.
