Summary

Surveyors observed that the facility failed to properly store, label, and date open food items in the dry storage area and walk-in freezer, as well as failed to discard food items past their expiration dates. Specifically, a container of chicken bouillon concentrate with a use-by date that had already passed was found in the walk-in freezer, along with opened and undated bags of breaded chicken tenderloin strips, sliced squash, tater tots, and chopped broccoli. Additionally, two floor dry storage bins containing sugar and flour were unmarked and undated. The Dietary Manager confirmed that the bouillon was expired and that the frozen chopped broccoli was leftover from a previous meal and had not been labeled. The facility's policy required labeling, dating, and monitoring of food items, but these procedures were not followed, and all staff were responsible for discarding expired food and rotating stock.
