Summary

During a kitchen tour with the Administrator, surveyors observed multiple food safety violations in the dietary department. In the walk-in cooler, 27 assorted glasses, 11 bags of cookies, and several bowls containing what appeared to be fruit or pudding were found without any identifying labels, dates, or proper coverings. Additionally, at the steam table, food temperatures were recorded below the required holding temperature of 135°F for certain items, including pureed sausage at 100°F and pureed eggs at 125°F, contrary to the facility's policy and professional standards.
