Summary

The facility failed to store food in accordance with professional standards for food service safety on both the first and second floor nursing units. During an observation of the second-floor kitchen dry food storage area, multiple loaves of bread and packages of buns were found with expired use by dates, and some items were not labeled or dated as required by facility policy. Specifically, one package of hot dog buns, one loaf of wheat bread, one loaf of raisin bread, and five packages of hamburger buns were expired, with two of the hamburger bun packages showing visible black and green spots. Additionally, nine loaves of rye bread were found without any visible received or use by dates. The Director of Dietary Services confirmed these findings during an interview, acknowledging that items were not properly labeled, dated, or stored, and that some items were expired and visibly spoiled.
