Summary

Surveyors found that the facility failed to store, prepare, and distribute food in a sanitary manner in both the main kitchen and the nourishment refrigerator/freezer. Specifically, time and temperature control foods were not consistently labeled, dated, or disposed of in a timely fashion. Observations included containers of broccoli and carrots without labels or dates, opened packages of sliced deli turkey and honey ham with only partial dating and no expiration dates, and an open package of sliced American Swiss cheese with no date. Additionally, a commercially processed raw turkey breast was found thawing in the refrigerator with unclear dating, and expired vanilla and chocolate magic cups were present in the nourishment refrigerator. Staff interviews revealed a lack of knowledge regarding proper labeling and expiration dating procedures. One cook was unaware of expiration dates on certain products and was unsure about the correct expiration dates for opened items such as sliced cheese and thawed turkey breast. The quality director confirmed that a food storage guideline chart existed but was not being properly utilized by kitchen staff for dating and labeling refrigerated food items.
