The Dietary Manager acknowledged the need for proper labeling and sealing of open foods and mentioned that undated items should be discarded. The facility's policy for food storage requires all refrigerated and frozen foods to be labeled, dated, and stored in moisture-proof containers, which was not consistently followed.
